Low Carb Sandwich Bun

This is a simple recipe for a single serving low carb sandwich or hamburger bun. I prefer to bake it in the oven for a nicely browned texture, but if you are in a hurry, it can also be microwaved and then toasted.

I was afraid it would be all crumbly, but it held together nicely and was perfect for my tuna salad sandwich. I’ll be sure to make more of these the next time we have hamburgers.

I had a craving for hash browns and thought, “Why not try making them with cauliflower?” So far, I’ve been able to substitute cauliflower for macaroni and cheese, pork fried rice, and mashed potatoes. So, why not hash browns?

This is great to serve with bacon and eggs, without the guilt of eating high-carb potato hash browns.

Steak, Bacon-Wrapped Asparagus, and Scallops

This is one of my most favorite low carb meals. I realize it is a lot of bacon, and fat, but oh, my gosh, it is so good! Who doesn’t love some bacon? And believe it or not, fat, including animal fat, does not cause cancer, heart disease, high cholesterol, obesity, or anything else. It has had a terrible reputation for years, and is completely undeserved. I would much rather have fat in my diet than carbohydrates. Carbs are the real culprit. Anyway, that’s my story and I’m sticking to it. So, let’s have some grilled steak and bacon! 🙂

This meal is easier than you might think. I just sit at my kitchen table and wrap the scallops with 1/2 strip of bacon each, and skewer them. Then, I take 3 or 4 asparagus spears and wrap each bundle with one strip of bacon, and lay them on a parchment lined baking sheet. Roast for about 30 minutes at 400F.

Meanwhile, my husband fires up the grill and cooks the steaks. Yum!

Low Carb Reuben Casserole

One of my most favorite sandwiches was the Reuben. I haven’t had one in a long time, and I’ve been craving one big time! Now that I eat low carb, I will have to do without the rye bread, but I’m sure I can manage. I will eat a hamburger or a hot dog without the bun. It’s not as much fun, but it satisfies my craving.
