Cauliflower hash browns with cheese

I had a craving for hash browns and thought, “Why not try making them with cauliflower?” So far, I’ve been able to substitute cauliflower for macaroni and cheese, pork fried rice, and mashed potatoes. So, why not hash browns?

This is great to serve with bacon and eggs, without the guilt of eating high-carb potato hash browns.

  • First, remove leaves and pull apart florets from one-fourth of a head of cauliflower. Add to colander and rinse. I then cut those in smaller chunks to fit in my food chopper. Or, you can use a box grater to grate the cauliflower.
  • Cut up the cauliflower florets into bite-size pieces.

    I was surprised at how well the chopper (or food processor) grated the cauliflower. It was so easy, and it looks just like rice.

    Chop cauliflower in processor/chopper or use hand grater

    1/4 head of cauliflower yields approx. 1 cup of cauliflower rice

  • Put “cauli-rice” in a bowl and add one egg and chopped or minced onion, then stir until well combined.
  • Add egg, onion and stir

  • In a skillet heated with butter or oil, form a large patty with the cauliflower mixture.
  • In a heated skillet, form into a round patty

  • Brown on one side, then flip over and brown the other side.
  • Fry both sides until golden brown

  • If desired, add shredded cheese and heat until completely melted. Cut into serving sized pieces.
  • Sprinkle top with shredded cheese heat until melted

  • Serve with eggs, or can be made into a breakfast sandwich.
