Yields approx. 2-1/2 cups of cauliflower rice

Cauliflower Rice, also called riced cauliflower or cauli-rice, is great for dishes usually served with potatoes, noodles or real rice. With this delicious low-carb alternative, you won’t even miss the real thing.

I make this every time I have something that would normally be served with rice. For example, one of our favorite family recipes is sauteed cabbage with sweet Italian sausage, served over rice. Now, I just chop up a little cauliflower and steam it in the microwave. VoilĂ ! A nice rice dish.

Consider this an alternative to your basic “white rice”. Then, depending on what else you’re cooking, you can embellish it any way you like. For example, you can just add some butter, or white cheddar and chives. Or, you can use it as your base for pork fried rice. Serve it over, under or on the side. Anything goes!

I usually only make this for myself when I’m making regular white rice for the boys (husband and two sons). This was a small head of cauliflower, and I only used half of it. It turned out to be two cups of cauli-rice. You could also chop up a whole head of cauliflower and freeze in one-cup servings in an airtight container or freezer bags, for up to three months. Cauliflower rice freezes nicely for cooking or steaming later. It might lose some of its grit, so if you like your rice crunchy, I wouldn’t freeze it. I like soft rice, and it still fries nicely for pork fried rice. Try freezing a little bit and see for yourself.

  • First, remove leaves and pull apart florets from head of cauliflower. Add to colander and rinse. Then, cut those in smaller chunks to fit in food chopper. Or, you can use a box grater to grate the cauliflower. I was surprised at how well the chopper (or food processor) grated the cauliflower. It was so easy, and it looks just like rice.
  • Cut up the cauliflower florets into bite-size pieces.

    Yields approx. 2-1/2 cups of cauliflower rice

    1/2 head of cauliflower yields approx. 2 cups of cauliflower rice

  • Put rice in a microwave-safe bowl, add a few drops of water, cover in plastic, pierce with a knife, and steam on high for 3 minutes. Or heat up a tablespoon of olive oil or butter in a skillet over medium heat, then stir in rice, cover and simmer for 5 to 8 minutes, until tender.
  • Sprinkle with salt.
  • Use immediately or store in refrigerator for up to a week. It can be stored in the freezer in an airtight container or freezer bag for up to six months.
