Low Carb Buttery Cabbage with Bacon

This is another favorite that my husband and I love. Simple to make, and budget friendly. It’s low carb and delicious!

Did you know that cabbage was one of the oldest vegetables known to man? Well, it is. Over the years, we’ve prepared it a bunch of different ways. We’ve shredded it, braised it, stuffed it, and roasted it. When we discovered how good it was for us, we loved it even more. One cup has only 20 calories, plus it’s high in vitamins and fiber. Not only is it good for us, it’s budget friendly. This is one of those side dishes that goes with everything.

At least once a week I make this along with sauteed sweet Italian sausage, served over cauliflower rice. I also love to make it with ham.

  1. Coarsely chop cabbage.
  2. Half of a small cabbage weighed approx. 1.4 pounds and equaled 8 cups of chopped cabbage.

  3. Chop onions.
  4. Cook bacon and set aside, retaining drippings.
  5. Add butter to bacon drippings. Saute onion for a minute.
  6. Add chopped cabbage, salt and pepper.
  7. Cover and simmer for approximately 20 minutes, or until desired tenderness.

  8. 8 cups of chopped raw cabbage cooks down to about 4 cups of cooked cabbage.
  9. Once cabbage is tender, crumble the bacon and toss into dish.
  10. Serve with Cauliflower Rice.
