Oh, my gosh! I just made some pancakes using my homemade baking mix and they were to die for! I was totally surprised at how good they were. In fact, because of the lack of guilt, these are way better than pancakes made with ordinary pancake mix. These really tasted great with melted butter and sugar-free syrup. 3.8g net carbs per pancake!

  • Gather together all of the ingredients.
  • Mix all ingredients in bowl.
  • Add 2 oz. softened cream cheese and whisk until smooth – Optional

  • If too thick, gradually add more water until you reach the right consistency. I prefer thinner pancakes, so I added a couple of more tablespoons.
  • Spray or add 1 tablespoon of butter and heat griddle to medium-high (325-350 F)
  • Pour 1/4 cup of batter for each pancake. I can fit four small pancakes on my griddle.
  • When edges appear dry and pancake is bubbly, flip over and lightly brown other side.
  • Serve with your favorite sugar-free toppings. Walden Farms Sugar Free syrup is the best!
