Low Carb Toasted English Muffin

I made this today, with a fried egg. It definitely satisfied my craving for bread with soft runny eggs. Only 4.4g net carbs, and It was yummy!

  • Gather together all of your ingredients and cooking utensils. It is so much easier when you have everything at hand when you need it.
  • Melt butter (or ghee) in a microwave safe ramekin or other container, about 4″ in diameter, for approx. 30 seconds. I used my Pyrex 10-ounce custard cup.
  • 1 Tablespoon of butter or ghee in ramekin

  • Add egg and stir.
  • Add egg

  • Add remaining ingredients and stir until well combined.
  • Microwave on high for 90 seconds. It should be firm to the touch. Or, bake in 400 degree oven for 10 to 12 minutes.
  • Run a knife along the edge and turn over to a plate. It should pop right out.

  • Slice in half, then brown in toaster or pan toast until golden brown.

  • Serve with butter, nut butter, or sugar free jam.

  • Add 2 Tbsp of blueberries to the mix and you’ll have a tasty low carb blueberry muffin.
  • This would also make a great breakfast sandwich.
