When I started my low carb diet back in July, my main objective was to lower my blood sugar. My sugar levels were so out of control (in the 200’s), I knew I had to do something drastic. It took me several months of eating nothing but meat, veggies, eggs, cheese, and nuts. No pasta, potatoes, rice, bread, or grains of any kind (See my post, My Journey to a Healthier Low Carb Way of Life.
Then, the holidays were upon us and I wanted so badly to celebrate the way I used to, by baking cakes, pies, cookies and such. I honestly thought those days were over. Until I began researching other low carb websites for holiday desserts, and I realized there was no reason for me to deprive myself of delicious desserts. My first attempt at holiday baking was my Low Carb Praline Pumpkin Cheesecake. It came out so good, I couldn’t believe that I had been avoiding sugar free desserts all these years.
So, I continued my quest for low carb baking and went on to making my Low Carb Sugar Free Holiday Cookies. That was when I discovered Swerve. I love their confectioners style sweetener, especially for frosting.

Ghirardelli Chocolate Squares Dark 60% Cacao
These are my favorite. They satisfy my craving for chocolate, aren’t bitter, and don’t spike my blood sugars. There are 14 individually wrapped squares in each bag. I normally have one or two squares after dinner. They are so yummy! I usually buy them at Kroger, but they seem to be their best seller and are always running out.
