This is a very simple, low carb lunch that I fix for myself almost every day. Except, today I get to use the wonderful turkey breast leftovers from Thanksgiving.
While sipping on my coffee, I sit at my kitchen table and prepare the lettuce wraps.
First, Let’s pick through the leftover white meat. At this point, there’s not much left. Slice it up into thin pieces.
Then, gather the ingredients. Romaine lettuce, mayonnaise, sliced ham and white turkey meat, Swiss cheese, and a hard boiled egg. Sometimes, if I have an oh, so delicious and juicy fresh-picked tomato, I’ll add a few slices, but juicy tomatoes can be a bit messy. 🙂
Slather the romaine lettuce leaves with delicious mayo. As you can tell, I don’t worry about the fat (that’s another story). My new mantra is – Fat is good, carbs are bad! On one leaf, lay several slices of ham. On the other leaf, lay the slices of turkey. I use two pieces of Swiss cheese, cut in half, and place the two halves on each wrap, lengthwise. (I forgot to snap a picture of the cheese 😀
Most of the time, I can roll up each lettuce wrap with no problem, but these didn’t want to stay closed. 🙂 If the lettuce leaves are big, I cut each one in half, making four lettuce wraps.
Add a hard-boiled egg for a little more protein, and you have a very filling and delicious lunch.
