Steak, Bacon-Wrapped Asparagus, and Scallops

This is one of my most favorite low carb meals. I realize it is a lot of bacon, and fat, but oh, my gosh, it is so good! Who doesn’t love some bacon? And believe it or not, fat, including animal fat, does not cause cancer, heart disease, high cholesterol, obesity, or anything else. It has had a terrible reputation for years, and is completely undeserved. I would much rather have fat in my diet than carbohydrates. Carbs are the real culprit. Anyway, that’s my story and I’m sticking to it. So, let’s have some grilled steak and bacon! 🙂

This meal is easier than you might think. I just sit at my kitchen table and wrap the scallops with 1/2 strip of bacon each, and skewer them. Then, I take 3 or 4 asparagus spears and wrap each bundle with one strip of bacon, and lay them on a parchment lined baking sheet. Roast for about 30 minutes at 400F.

Meanwhile, my husband fires up the grill and cooks the steaks. Yum!
